  • 2 cups carrots (chopped)
  • 1 cup celery (chopped)
  • 1 cup onion (chopped)
  • 10 oz cauliflower rice (frozen)
  • 1 cup cooked brown rice
  • 1/2 cup hot sauce
  • 1/3 cup reduced-fat cream cheese
  • 1/2 cup fat-free cheddar cheese

Instructions

  1. Chop carrots, celery, and onions into small pieces.
  2. In a small bowl, mix garlic powder, paprika, kosher salt, cumin, and onion powder.
  3. Sauté chopped vegetables in a non-stick frying pan with olive oil spray over medium heat for about 10 minutes until tender; set aside.
  4. Cook ground chicken in the same skillet until no longer pink; add remaining seasoning blend.
  5. Stir in frozen cauliflower rice; cook for 5 minutes before adding cooked brown rice.
  6. Combine chicken and vegetables back into the skillet with hot sauce and chicken broth; simmer for 5 minutes.
