  • 200 g granulated sugar
  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites (room temperature)
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 3 tbsp limoncello
  • 50 g granulated sugar (for rolling)
  • 30 g powdered sugar (for rolling)

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine lemon zest with granulated sugar by massaging until fully blended.
  3. Sift almond flour into a large bowl and mix in the lemon-sugar combination.
  4. In another bowl, whip egg whites and salt until stiff peaks form.
  5. Gently fold in almond extract, limoncello, followed by the almond flour mixture in thirds until combined.
  6. Roll cookie dough into balls, first in granulated sugar then powdered sugar before placing on the baking sheet.
  7. Lightly press down on each cookie to create cracks on top.
  8. Bake for 22-25 minutes or until golden brown at the bottom.
  9. Allow to cool completely on a wire rack before serving.
