  • 68 slices bacon
  • 1 large onion, diced
  • 1 tablespoon minced garlic
  • ¼ teaspoon black pepper
  • ¼ teaspoon kosher salt
  • 2 cups low-sodium chicken broth
  • 1 pound potato gnocchi
  • 1 cup heavy cream
  • 1 cups shredded cheddar cheese, plus extra for topping
  • scallions or chives for garnish
  • sour cream for garnish

Instructions

  1. Cook bacon in a Dutch oven over medium heat until crisp. Drain and chop; set aside, leaving some drippings.
  2. Sauté onion in the Dutch oven until translucent, then add garlic, black pepper, and salt; cook for another minute.
  3. Add chicken broth and bring to boil; stir in gnocchi and cook until floating.
  4. Reduce heat, stir in heavy cream slowly, then add shredded cheddar in batches until melted. Mix in reserved bacon.
  5. Serve garnished with remaining bacon bits, extra cheese, scallions or chives, and a dollop of sour cream.
