  • 1/2 cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs
  • 2 1/2 cups all-purpose flour
  • 2 3/4 tsp baking powder
  • 1/2 tsp salt
  • For frosting: 2 cups salted butter
  • 1 1/4 cups peanut butter

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing or lining them.
  2. In a mixing bowl, cream together the unsalted butter, sugar, and brown sugar until fluffy. Mix in the peanut butter, sour cream, vanilla extract, and eggs until smooth.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually combine the dry ingredients into the wet mixture until just mixed.
  4. Pour batter into prepared pans and bake for about 23 minutes or until a toothpick comes out clean. Cool before frosting.
  5. To make the frosting, beat salted butter and peanut butter together; gradually add powdered sugar and milk until desired consistency is reached.
  6. Assemble the cake by layering with frosting in between and covering the top and sides.
