  • 2 cups fresh cooked lobster meat
  • 1 cup heavy cream
  • 1 cup chicken or seafood stock
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 medium carrots (diced)
  • 2 stalks celery (diced)
  • 1 cup frozen peas
  • 2 teaspoons fresh thyme
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 ready-made pie crusts
  • 1 large egg (beaten for brushing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion, carrots, and celery for about 5-7 minutes until softened. Add minced garlic and cook for another minute.
  3. Stir in heavy cream, chicken or seafood stock, thyme, lemon juice, salt, black pepper, and frozen peas. Cook on low until slightly thickened (about 5 minutes).
  4. Place one pie crust in a pie dish, pour the lobster filling over it, then cover with the second crust. Seal edges and cut slits on top.
  5. Bake for 35-40 minutes until golden brown. Let cool slightly before serving.
