  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar (divided)
  • 1 cup sour cream
  • 4 large eggs
  • Zest and juice of 1 lemon

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs with ¼ cup sugar and melted butter. Press into a 9-inch springform pan. Bake for 8-10 minutes; cool.
  3. Simmer raspberries with 2 tbsp sugar and lemon juice in a saucepan for 5-7 minutes until thickened; strain and set aside.
  4. Beat softened cream cheese with 1 cup sugar until smooth. Add sour cream, lemon zest, lemon juice, and eggs one at a time on low speed.
  5. Pour filling over cooled crust; swirl raspberry sauce on top using a knife.
  6. Bake for 55-65 minutes until set but slightly jiggly; cool in the oven for an hour before refrigerating for at least four hours.
