  • 1/4 cup milk (plus more for glaze)
  • 2 cups diced fresh or frozen mango
  • 1 cup powdered sugar (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • 12 tbsp milk (for glaze)

Instructions

  1. Cream together softened butter, granulated sugar, brown sugar, and vanilla extract in a mixing bowl until light and fluffy.
  2. Add the egg and milk; mix until well combined.
  3. Gradually incorporate flour and baking powder until just combined.
  4. Gently fold in diced mango chunks.
  5. Chill the dough for at least 30 minutes in the refrigerator.
  6. Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized portions of dough onto prepared sheets, leaving space between each cookie.
