  • 1 pound U20 fresh shrimp
  • 1 ½ cups diced fresh mango
  • 1 ½ cups diced fresh pineapple
  • ¼ cup diced red onion
  • 1 serrano chile or jalapeno pepper (diced)
  • 1 ripe Hass avocado (diced)
  • ⅓ cup fresh cilantro (finely minced)
  • Lime juice, cumin, salt, and pepper for seasoning

Instructions

  1. Boil salted water in a small kettle. Cook the shrimp for 90 seconds to 3 minutes until pink. Transfer to an ice bath to cool.
  2. While cooling, chop the mango, pineapple, red onion, serrano or jalapeno pepper, avocado, and cilantro. Combine these in a medium bowl with cumin, lime juice, salt, and pepper.
  3. Once cooled, add shrimp to the bowl and mix well. Adjust seasoning if needed before serving.
