  • 4 boneless, skinless chicken breasts
  • 1/2 cup pure maple syrup
  • 3 tablespoons olive oil
  • 2 large sweet potatoes, peeled and cubed
  • Fresh thyme leaves
  • Salt and pepper to taste
  • Optional: chopped pecans for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potatoes with olive oil, garlic powder, salt, and pepper; spread onto one half of the baking sheet.
  3. Coat chicken breasts in remaining olive oil and mix with maple syrup, apple cider vinegar, thyme, salt, and pepper; place on the other half of the baking sheet.
  4. Roast for 25–30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are tender.
  5. Optionally toast pecans in butter until fragrant; sprinkle over sweet potatoes before serving.
