  • 1¼ teaspoons maple extract
  • ½ cup finely chopped pecan or walnuts
  • 3 tablespoons brown sugar (packed)
  • ¼ cup all purpose flour (for topping)
  • ¾ teaspoon ground cinnamon (for topping)
  • ¼ teaspoon salt (for topping)
  • 2 tablespoons unsalted butter (melted, for topping)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • ¼ teaspoon maple extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine topping ingredients (nuts, brown sugar, flour, cinnamon, salt, melted butter) in a bowl until crumbly; set aside.
  3. In another bowl, whisk together dry ingredients (flour, spices, baking soda/powder, salt).
  4. In a large bowl, beat eggs and sugar until fluffy; mix in oil, pumpkin puree, milk, and maple extract.
  5. Gradually fold dry ingredients into wet mixture until just combined.
  6. Pour batter into greased loaf pan and sprinkle with topping.
  7. Bake for 50 minutes or until a toothpick comes out clean.
