  • 120g light brown sugar
  • 70g granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 120g all-purpose flour
  • 150g whole rolled oats
  • 2 tablespoons ground coffee
  • 100g powdered sugar (for glaze)
  • 90g maple syrup (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter, light brown sugar, and granulated sugar until fluffy.
  3. Mix in ground coffee, instant espresso, vanilla extract, cinnamon, and sea salt until well combined.
  4. Add the cold egg and yolk; beat until incorporated.
  5. In another bowl, whisk together flour, baking powder, baking soda, and quick oats. Gradually mix this into the wet ingredients until just combined.
  6. Fold in whole rolled oats gently.
  7. Scoop heaping tablespoons of dough onto the baking sheet about 2 inches apart.
  8. Bake for about 12 minutes until the edges are golden but centers are still soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  10. Whisk powdered sugar and maple syrup for glaze; drizzle over cooled cookies and top with flaky sea salt.
