  • 200 g strawberries, hulled and halved
  • 15 g sugar
  • 397 g sweetened condensed milk (1 can)
  • 240 g mascarpone cheese (room temperature)
  • 360 ml heavy cream (cold)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine salt

Instructions

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper, spread out the strawberries, sprinkle with sugar, and toss lightly.
  2. Roast for 20–25 minutes until soft and syrupy. Let cool slightly.
  3. Blend roasted strawberries into a smooth puree and chill.
  4. In a mixing bowl, combine mascarpone cheese and condensed milk until smooth.
  5. Whisk in cold heavy cream, vanilla extract, and salt until soft peaks form.
  6. Layer half the mascarpone mixture in a freezer-safe dish; add half the strawberry puree and swirl gently. Repeat with remaining mixtures.
  7. Cover with parchment directly on the surface and freeze for at least 6 hours or overnight.
