  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a mixing bowl, combine sliced onions, bell peppers, cherry tomatoes, minced garlic, olives, and optional capers. Drizzle with olive oil and season with oregano, salt, and pepper; toss to coat.
  3. Spread the vegetable mixture evenly in the baking dish. Place fish fillets on top (skin side down if applicable). Squeeze lemon juice over the fish and sprinkle with lemon zest as well as additional seasoning.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork; ensure veggies are tender.
  5. Garnish with chopped fresh parsley and serve with lemon wedges.
