  • 1 tablespoon tomato paste

  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano or thyme
  • Fresh cracked pepper
  • 2 tablespoons extra virgin olive oil (for rice)
  • ½ medium yellow or white onion, chopped
  • 2 cups Basmati rice
  • 3 cups chicken broth
  • Kosher salt (for toppings)
  • 1 large cucumber, chopped
  • 4 roma tomatoes or 2 large beefsteak tomatoes, chopped
  • 1 tablespoon extra virgin olive oil (for toppings)
  • ½ cup loosely packed mint or parsley, chopped
  • Kosher salt and fresh cracked pepper (for serving)
  • 4 slices naan or pita bread for serving
  • 8 oz. hummus for serving

Instructions

  1. Marinate chicken in Greek yogurt, olive oil, garlic, lemon juice, and spices for at least 30 minutes.
  2. Cook chopped onion in olive oil until translucent; add rinsed rice and broth. Bring to a boil, then simmer until tender.
  3. Grill marinated chicken skewers on medium-high heat for about 10–12 minutes until fully cooked.
  4. Assemble bowls with fluffy rice topped with grilled chicken and fresh vegetables.
