  • 1 lb ground beef (85% lean or higher)
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 small zucchini, diced
  • Cherry tomatoes and kalamata olives
  • Spices: cumin, smoked paprika, oregano, red pepper flakes
  • Fresh parsley and feta cheese for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté onions until soft, then add garlic; cook until fragrant.
  3. Add ground beef, breaking it up as it cooks. Season with salt, pepper, cumin, paprika, oregano, and red pepper flakes.
  4. Cook until beef is browned (5–7 minutes), then add bell pepper and zucchini; sauté for another 5 minutes.
  5. Stir in cherry tomatoes and olives; cook for an additional 2 minutes.
  6. Remove from heat and add parsley and lemon juice before serving.
  7. Top with feta cheese and optional pine nuts.
