  • 1 medium cucumber
  • 1/2 small red onion
  • 1 1/2 cups cherry tomatoes
  • 1/2 cup kalamata olives
  • 1/2 cup roasted red peppers
  • 1/2 cup crumbled feta cheese
  • Fresh herbs: oregano and mint
  • Citrus juices: orange and lemon
  • Olive oil, Dijon mustard, honey

Instructions

  1. Rinse the lentils thoroughly in a fine-mesh sieve to remove impurities.
  2. Cook lentils in a medium pot with water and a bay leaf until tender (18-25 minutes). Drain and cool.
  3. In a large bowl, combine cooled lentils with chopped cucumber, sliced red onion, halved cherry tomatoes, olives, roasted peppers, feta cheese, oregano, and mint.
  4. In a separate bowl, whisk together orange juice, lemon juice, Dijon mustard, honey, olive oil, salt, and pepper. Pour dressing over the salad and toss to combine.
