  • Cherry tomatoes

  • Parmesan rind

  • Red chili pepper flakes

  • Dried orzo pasta
  • Curly kale
  • Fresh basil leaves

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add diced onion, carrot, and celery; sauté for 5 minutes until softened.
  2. Stir in minced garlic; cook for 1 minute until fragrant.
  3. Add vegetable stock, Parmesan rind, cherry tomatoes, oregano, red chili flakes, and rosemary. Bring to a simmer.
