  • 4 pieces of lavash bread
  • 1/2 cup tomato jam (or raw/sun-dried tomatoes)
  • 6 ounces arugula (or greens of choice)
  • 1/2 cup tofu feta cheese
  • 1 English cucumber (sliced thin)
  • 1/4 cup kalamata olives (diced)
  • 1/2 cup pickled red onions or raw onions
  • 1/2 cup hummus

Instructions

  1. Lay each lavash wrap flat on a clean surface.
  2. Spread 1/4 of the tomato jam on one side of each wrap.
  3. Layer arugula next to the jam.
  4. Add tofu feta over the arugula.
  5. Place cucumber slices in a row, slightly overlapping.
  6. Sprinkle kalamata olives followed by pickled onions on top.
  7. Smear hummus on the opposite end of the wrap.
  8. Roll tightly from left to right to secure fillings.
  9. Serve cold or heat in a skillet until crispy.
