  • 2 cups frozen corn
  • 4 cups chicken bone broth or low-sodium chicken broth
  • 2 tablespoons fresh lime juice
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Sauté diced onion and jalapeño in a large pot over medium heat until softened (3-4 minutes). Add minced garlic and cook for an additional minute.
  2. Stir in shredded chicken, broth, oregano, chili powder, salt, and pepper. Bring to a boil; reduce heat, cover, and simmer for 10-15 minutes.
  3. Whisk cornstarch with water in a small bowl until smooth.
  4. Remove chicken to shred it with two forks; return to pot along with frozen corn and lime juice.
  5. Add cornstarch slurry and simmer uncovered for another 10 minutes until thickened.
