  • 4 cups corn (frozen or fresh)
  • 1 red bell pepper (diced)
  • 1 bunch fresh cilantro (minced)
  • 1 jalapeno (diced)
  • 1/2 large red onion (diced)
  • 2/3 cup cotija cheese (crumbled)
  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • Juice of 2 limes
  • Spices: cumin, paprika, salt, chili powder

Instructions

  1. Heat olive oil in a sauté pan over medium-high heat. Add corn and jalapeno; cook until slightly charred (7-10 minutes). Transfer to a large bowl.
  2. Add diced red pepper, red onion, and minced cilantro to the bowl with charred corn; mix well.
  3. In a small bowl, combine sour cream, mayonnaise, lime juice, cumin, paprika, salt, and chili powder; whisk until smooth.
  4. Pour dressing over the corn mixture; mix thoroughly. Fold in half of the cotija cheese.
  5. Top with remaining cotija cheese and extra cilantro leaves for garnish.
