  • 2 teaspoons baking powder
  • 1 cup salted butter
  • 1.5 cups sugar
  • 6 large eggs
  • 1 cup 2% milk
  • 1 tablespoon vanilla extract
  • 2 tablespoons lemon zest
  • 1/3 cup fresh lemon juice
  • 2 cups blueberries (tossed in flour)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans.
  2. Cream together sugar, butter, and lemon zest until fluffy. Add eggs, mixing one at a time, then stir in vanilla and milk.
  3. Sift together flour and baking powder; gradually mix into the wet ingredients. Gently fold in blueberries.
  4. Divide batter between loaf pans and bake for 55-60 minutes until golden brown and a toothpick comes out clean.
  5. While still warm, brush with a lemon syrup made from simmering lemon juice and sugar until slightly reduced.
  6. Allow to cool completely before glazing with powdered sugar mixed with lemon juice.
