Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin pan with paper liners.
  2. In a food processor, blend together all-purpose flour, almond flour, granulated sugar, baking powder, and salt.
  3. Add cubed butter, vanilla extract, and almond extract. Process until a dough forms.
  4. Turn out the dough onto a clean surface and knead gently until smooth. Use a small cookie scoop to portion it out into balls.
  5. Place each ball into the muffin liners and create indentations using the end of a wooden spoon.
  6. Fill each indentation with raspberry jam using a zip-top bag for easy piping.
  7. Bake for 13-15 minutes or until golden brown. Let cool before dusting with powdered sugar.
