  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup all-purpose flour (for monster cookies)
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/8 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter (room temperature)
  • 1/3 cup brown sugar (packed light or dark)
  • 1/8 cup white granulated sugar
  • 1/4 cup peanut butter (creamy)
  • 1 tsp pure vanilla extract
  • 1 large egg (room temperature)
  • 1/2 cup quick oats
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&Ms

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, whisk together sugar, eggs, melted butter, and vanilla until smooth. Add flour, cocoa powder, cornstarch, and salt; mix until just combined. Fold in chocolate chips.
  3. Spread brownie batter in the prepared pan and bake for about 20 minutes.
  4. Prepare the monster cookie topping by creaming butter and sugars together. Mix in peanut butter, vanilla, and egg. In another bowl, combine dry ingredients; then add to wet mixture along with oats and chocolate chips.
  5. Spoon the cookie mixture over the partially baked brownies and spread gently.
  6. Return to oven and bake for an additional 20 minutes or until a toothpick comes out clean.
  7. Allow to cool completely before lifting out using parchment paper; cut into bars.
