  • 10 oz. mushrooms (button or baby bella)
  • 2 tablespoons salted butter
  • 2 large boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 34 tablespoons olive oil
  • 2½ cups beef broth
  • 1 teaspoon soy sauce
  • 3 cloves garlic (minced)
  • ⅓ cup heavy cream

Instructions

  1. Clean and slice the mushrooms; mince the garlic.
  2. In a skillet over medium heat, add olive oil. Season chicken with salt and pepper, then cook each side for about 5–7 minutes until browned. Remove from skillet.
  3. Melt butter in the same skillet, add mushrooms, and sauté for about 5 minutes. Stir in minced garlic during the last minute.
  4. Sprinkle flour over the mushrooms and gradually whisk in beef broth until smooth. Add soy sauce; simmer for about 10 minutes until thickened.
  5. Return chicken to skillet; mix cornstarch with water to create a slurry and stir into the sauce with heavy cream. Simmer for another 5–10 minutes.
  6. Serve warm over rice or pasta.
