  • 1/2 cup unsalted butter (melted)
  • 12 ounces 60% cocoa chocolate (finely chopped)
  • 1 and 3/4 cups heavy cream
  • 1/2 cup Baileys Irish cream
  • 2 teaspoons vanilla extract
  • 2 teaspoons espresso powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Crush the Oreo cookies into fine crumbs and mix them with melted butter until combined. Press into the bottom of a pie dish to form the crust.
  2. Melt the chopped chocolate in a saucepan over low heat until smooth, then let it cool slightly.
  3. In a bowl, whip the heavy cream until soft peaks form. Gently fold in Baileys, vanilla extract, espresso powder, sea salt, and melted chocolate until just combined.
  4. Pour the filling into the prepared crust and spread evenly. Refrigerate for at least 4 hours or until set.
  5. For whipped topping, beat cold heavy cream until soft peaks form; gradually add confectioners' sugar and whip to stiff peaks.
  6. Spread whipped topping over the chilled pie and garnish with chocolate shavings if desired.
