  • 1 cup packed pitted Medjool dates
  • ¼ cup raw walnuts
  • ¼ cup raw pecans
  • ½ cup shelled pistachios
  • ¼ cup unsweetened finely shredded coconut
  • 3 tablespoons unsweetened cacao powder
  • 1 tablespoon chia seeds
  • 1 tablespoon melted virgin coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¼ cup dried cranberries (or dried cherries or goji berries)
  • 1 tablespoon warm water, if necessary
  • 2 ounces dark chocolate (for topping)
  • 1 tablespoon shelled chopped pistachios
  • 1 tablespoon dried cranberries, cherries or goji berries
  • 1 tablespoon chopped pecans
  • Maldon sea salt for sprinkling on top

Instructions

  1. In a food processor, blend dates, walnuts, pecans, and ¼ cup of pistachios until chunky.
  2. Add shredded coconut, chia seeds, cacao powder, melted coconut oil, vanilla extract, and sea salt; process until slightly clumping. If dry, add warm water as needed.
  3. Stir in remaining pistachios and dried cranberries; pulse until mixed.
  4. Press the mixture into an 8×4 inch loaf pan lined with parchment paper.
  5. Melt dark chocolate in a saucepan over low heat; pour over the brownie mixture.
  6. Garnish with chopped nuts and place in the freezer for 20-45 minutes to set. Cut into squares and serve.
