  • 1 cup unsalted butter (room temperature)
  • 1 cup Domino® Granulated Sugar
  • 1 cup Domino® Light Brown Sugar (packed)
  • 1 tbsp vanilla extract
  • 3 large eggs (room temperature)
  • 1/4 cup full-fat sour cream (room temperature)
  • 2 1/2 cups unsalted butter (room temperature)
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 2 tsp vanilla extract
  • 1 tsp vanilla bean paste
  • 1 cup white chocolate chips
  • 1/4 cup + 3 tbsp heavy cream
  • white food coloring (optional)
  • oatmeal cream pie cookies (for decorating)

Instructions

  1. Preheat the oven to 350°F (180°C). Line three 8-inch cake pans with parchment paper.
  2. In a pot, boil water, then add oats. Remove from heat, cover, and let sit for 20 minutes until cooled.
  3. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl.
  4. In a stand mixer, beat butter and sugars until fluffy. Add eggs, sour cream, and vanilla; mix well.
  5. Stir in cooled oats and dry ingredients until just combined.
  6. Divide batter among the prepared pans and bake for 20–22 minutes until a toothpick comes out clean. Cool completely on wire racks.
  7. For frosting, beat butter until fluffy; gradually add powdered sugar then heavy cream and vanilla.
  8. Assemble the cake by layering frosting between each layer; cover the entire cake with frosting.
  9. Prepare glaze by heating cream over white chocolate chips until melted; pour over the cake once cooled.
  10. Decorate with crumbled oatmeal cookies before serving.
