  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened but still cool)
  • 1⅓ cups brown sugar (light or dark)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1½ tablespoons unsulphured molasses
  • 1½ teaspoons pure vanilla extract
  • 12 tablespoons unsalted butter (softened to cool room temperature)
  • 1½ cups marshmallow creme
  • 2 cups powdered sugar (sifted if lumpy)
  • ¾ teaspoon pure vanilla extract
  • couple pinches salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix oats, flour, cinnamon, baking soda, and salt.
  3. In another bowl, cream together softened butter and sugars until light. Add eggs one at a time, then stir in molasses and vanilla.
  4. Gradually incorporate dry ingredients without overmixing.
  5. Drop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them 2 inches apart.
  6. Bake for 10 minutes until lightly golden but soft in the center; allow to cool on racks.
  7. For frosting, beat together softened butter and marshmallow creme until smooth. Gradually add powdered sugar and mix in salt.
  8. Assemble by spreading frosting between two cookie halves.
