  • 8 cups chopped lettuce
  • ¼ cup shredded red cabbage
  • ¼ cup julienne carrots
  • ¼ cup red onion
  • ½ cup black olives
  • 2 roma tomatoes (sliced)
  • 1/3 cup pepperoncinis
  • 1 cup croutons
  • ¼ cup grated Parmesan cheese
  • 3/4 cup extra virgin olive oil
  • 1 (.7 oz.) packet Zesty Italian Dressing Mix
  • 1/3 cup white vinegar
  • ¼ cup water
  • 1 tablespoon grated Romano cheese
  • 3 teaspoons sugar
  • 1 ½ teaspoons mayo
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder

Instructions

  1. In a mini food processor or jar, combine the dressing ingredients: olive oil, Zesty Italian Dressing Mix, white vinegar, water, Romano cheese, sugar, mayo, Dijon mustard, Italian seasoning, salt, pepper, and garlic powder. Blend until smooth and emulsified. Refrigerate while preparing the salad.
  2. Pat the sliced tomatoes dry with paper towels to remove excess moisture.
  3. In a large bowl, mix together the lettuce, red cabbage, carrots, red onion, black olives, tomatoes, and pepperoncinis.
  4. Drizzle the desired amount of dressing over the salad and toss gently to coat evenly.
  5. Top with croutons and grated Parmesan cheese before serving.
