  • 1 tablespoon Dijon mustard
  • 2 pounds boneless, skinless chicken breasts (pounded to even thickness)
  • 8 ounces grape tomatoes (halved)
  • 8 ounces fresh mozzarella balls (ciliegine or pearls)
  • Fresh basil (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper.
  3. In another bowl, toss halved grape tomatoes and mozzarella balls with chopped basil; season with salt and pepper.
  4. Heat oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper; sear for 1-2 minutes per side until golden brown.
