  • 4 cups low-sodium chicken broth
  • 1/2 cup dry white wine (optional)
  • 1.5 pounds peeled and deveined shrimp
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Fresh lemon juice and zest

Instructions

  1. In a large oven-safe skillet, heat olive oil and butter over medium heat. Sauté diced onion until softened, about 5 minutes; add garlic and red pepper flakes for an additional minute.
  2. Stir in orzo and toast for 1–2 minutes. If using wine, pour it in now and simmer briefly.
  3. Pour chicken broth along with lemon zest into the skillet; bring to a boil then reduce heat to low. Cover and simmer for about 10–12 minutes until most liquid is absorbed.
  4. Gently add shrimp, nestling them among the orzo; cover again and cook until shrimp are pink (about 3–5 minutes).
  5. Off heat, mix in Parmesan cheese and heavy cream until combined; finish with fresh lemon juice.
