  • 2 lbs boneless skinless chicken breasts
  • 4 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 bell peppers (red, yellow, green), sliced
  • 4 cloves garlic, minced
  • 2 cups reduced-sodium chicken stock
  • 1/2 cup heavy cream
  • 10 oz can diced tomatoes
  • 8 oz dried bow tie pasta

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces seasoned with fajita seasoning; cook until golden brown on both sides. Remove and set aside.
  3. In the same skillet, add remaining oil and sauté onions and bell peppers with seasoning until softened. Stir in garlic for an additional 30 seconds.
  4. Pour in chicken stock, heavy cream, and diced tomatoes; season with salt and pepper. Bring to a boil.
  5. Stir in pasta; reduce heat to low boil, cover, and cook for about 10 minutes until pasta is tender.
  6. Return chicken and veggies to the skillet to warm through before serving.
