  • 1 pound boneless chicken thighs (or breasts/rotisserie chicken)
  • 1 onion, diced
  • 2 medium carrots, sliced
  • 24 tablespoons red curry paste
  • 5 cups low sodium chicken broth
  • 2 cans coconut milk
  • 8 oz rice vermicelli noodles
  • Fresh lime juice and sriracha to taste

Instructions

  1. Sear chicken in olive oil in a large Dutch oven until browned, then set aside.
  2. Sauté onions and carrots in drippings for four minutes, then add red curry paste, ginger, and garlic; cook for two more minutes.
  3. Return chicken to the pot along with broth, coconut milk, soy sauce, fish sauce, kaffir lime leaves, brown sugar, salt, and pepper.
  4. Simmer for fifteen minutes until chicken is tender enough to shred.
  5. Remove chicken; add mushrooms, bell pepper, cauliflower, and noodles; simmer until noodles are almost al dente.
  6. Shred chicken and stir back into the soup with cilantro, lime juice, and sriracha.
  7. Adjust seasoning before serving; garnish with crushed peanuts and fresh herbs.
