  • lb chicken breast
  • 2 lb red potatoes
  • 1 lb fresh green beans
  • 2 Tbsp olive oil
  • 2 garlic cloves
  • ⅓ cup grated parmesan cheese
  • ⅓ cup breadcrumbs (Italian or plain)
  • ½ tsp cracked pepper
  • ½¾ tsp sea salt

Instructions

  1. Preheat the oven to 425°F.
  2. Line a sheet pan with parchment paper or spray with cooking oil.
  3. In a bowl, toss potatoes with olive oil, garlic, parmesan, salt, and pepper; spread on one-third of the sheet pan.
  4. Bake potatoes for 10-15 minutes while preparing the chicken.
  5. Coat chicken in olive oil, garlic, parmesan, breadcrumbs, salt, and pepper; place on the pan next to potatoes.
  6. Toss green beans with olive oil, garlic, salt, and pepper; add to the sheet pan.
  7. Bake for another 25 minutes until chicken reaches an internal temperature of 165°F.
