Patriotic Pinwheel Cookies are a vibrant and festive treat that adds color and joy to any holiday celebration, especially the 4th of July. Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter (room temperature)
  • 2/3 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • red food coloring
  • royal blue food coloring

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg one at a time while beating well after each addition. Then mix in the vanilla extract until fully incorporated.
  4. Gradually add the flour mixture to the wet ingredients. Mix just until combined; do not overmix.
  5. Remove the dough from the bowl and divide it into three equal sections.
  6. Shape one piece into approximately a 4×2 rectangle, wrap it in wax paper, and refrigerate it. This will be your white layer.
  7. Place each of the remaining two portions into separate bowls. Color one portion red and the other blue using food coloring.
  8. Form both red and blue dough into rectangles between wax paper. Refrigerate all dough pieces for about 30 minutes.
  9. Roll out each color of dough (red, white, blue) between two pieces of wax paper until each is about 1/8-inch thick.
  10. Peel off wax paper from the red layer's top. Place white layer on top. Repeat with blue layer on top of white.
  11. Starting from one end, roll tightly into a log shape. Wrap tightly in wax paper and chill.
  12. Preheat your oven to 350ºF (175ºC) and line two baking sheets with parchment paper.
  13. Remove chilled dough from wax paper and slice into 1/4-inch rounds. Place rounds on prepared baking sheets.
  14. Bake for about 9 to 11 minutes or until pale golden around the edges. Let sit on trays for about 3–4 minutes before transferring them to cooling racks.
