  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup champagne or sparkling wine
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup peach puree (fresh or canned)
  • 1 cup unsalted butter, room temperature
  • 34 cups powdered sugar, sifted
  • 34 tablespoons peach puree
  • 12 tablespoons champagne or sparkling wine
  • Pinch of salt
  • Fresh peach slices
  • Candied peach or cherry (optional)
  • Sparkling sugar or granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. Whisk together flour, baking powder, and salt in one bowl. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time.
  3. Combine wet ingredients (champagne, milk, vanilla, and peach puree) in a separate bowl. Gradually mix dry ingredients into the wet mixture until just combined.
  4. Fill cupcake liners two-thirds full and bake for 18–20 minutes until a toothpick comes out clean. Cool completely.
  5. For frosting, beat butter until smooth, add powdered sugar gradually followed by peach puree and champagne until fluffy. Frost cooled cupcakes and garnish with fresh peach slices.
