  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Prepare the peach filling by mixing cubed peaches with sugar, lemon juice, cornstarch, and water; let sit for 10 minutes.
  2. Combine warm water, bread flour, sugar, yeast, and salt in a bowl; mix. Gradually add milk, cream, egg, tangzhong, and vanilla while kneading until smooth.
  3. Let the dough rise in a greased bowl until doubled in size (about 90 minutes).
  4. Roll out the dough into a rectangle; spread softened butter on top.
  5. Sprinkle brown sugar mixed with cinnamon over the butter; layer peach filling evenly.
  6. Roll tightly into a log and cut into pieces; place on a greased baking sheet and let rise for another hour.
  7. Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
