  • 1 ½ tbsp avocado oil
  • ¼ cup yellow onion (thinly sliced)
  • 3 large peaches (pitted, peeled, and diced)
  • ⅓ cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375℉.
  2. Heat avocado oil in a skillet over high heat. Season pork with salt and pepper, then sear for 3-4 minutes on each side until browned. Remove from heat.
  3. In the same skillet, sauté onions and rosemary until golden, about 1 minute.
  4. Add brown sugar, apple cider vinegar, Dijon mustard, and diced peaches; stir until combined.
  5. Return the pork to the skillet, coating it with the glaze. Bake for approximately 10 minutes or until internal temperature reaches 145℉.
  6. Let rest for 5-10 minutes before slicing and serving with the warm glaze.
