  • 2 ripe pears, diced
  • 4 oz Gorgonzola cheese, crumbled
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine diced pears, Gorgonzola cheese, spinach, garlic, salt, and pepper.
  3. Slice open each chicken breast to create a pocket and stuff generously with the pear mixture.
