  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 2 packages cream cheese (8 oz each, softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup light brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup heavy whipping cream
  • 1/4 cup unsalted butter
  • 1/2 teaspoon kosher salt
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 13×9 inch baking dish with parchment paper.
  2. In a food processor, pulse graham crackers with sugar until fine crumbs form. Add melted butter and combine well. Press into the bottom of the prepared dish.
  3. In a mixing bowl, beat cream cheese and sugar until fluffy. Add eggs and vanilla; mix until smooth. Pour over the crust.
  4. In a saucepan, combine brown sugar, corn syrup, heavy cream, unsalted butter, and salt over medium heat until boiling. Stir in vanilla and pecans, then pour over the cheesecake layer.
  5. Bake for about 35 minutes until edges are set but center is slightly jiggly. Cool completely before refrigerating for at least four hours.
