  • 1.52 pounds chicken (thighs or breasts)
  • 1 cup jasmine rice
  • 1 cup fresh cilantro leaves
  • 23 cloves garlic (for chicken and sauce)
  • 2 tablespoons lime juice
  • 2 cups chicken stock
  • 2 whole jalapeño chiles
  • ¼ cup mayonnaise
  • 1 tablespoon olive oil

Instructions

  1. Marinate the chicken by mixing garlic, lime juice, oil, cumin, paprika, salt, and pepper in a bowl. Add chicken and coat well; refrigerate for at least an hour.
  2. Preheat grill to medium-high or oven to 450°F.
  3. Cook the marinated chicken on the grill for about 5–7 minutes per side or bake for 30 minutes until cooked through.
