  • 3/4 cup fresh basil leaves
  • 3/4 cup olive oil
  • 2 garlic cloves
  • 1/2 cup grated parmesan cheese
  • 1/4 cup pistachios
  • Salt and pepper to taste
  • 1 roll or bread of choice (bagels work great too)
  • Few slices of crispy mortadella
  • 2 large eggs
  • Mozzarella cheese for melting

Instructions

  1. In a food processor, combine basil, olive oil, garlic, parmesan cheese, pistachios, salt, and pepper. Blend until smooth.
  2. Heat a skillet over medium heat and toast your bread. Add a scoop of pesto to one side of the skillet.
  3. Crack the eggs over the pesto; season with salt and pepper.
  4. On the other side of the skillet, add slices of mortadella until crispy (about 4 minutes). Flip carefully.
  5. Top mortadella with mozzarella and cover briefly until melted.
  6. Assemble by spreading remaining pesto on toasted bread, adding the eggs and cheesy mortadella before closing.
