- 1 cup jasmine rice
- 1½ cups water
- 1 tablespoon unsalted butter
- 1 (8-ounce) can crushed pineapple in juice
- ½ teaspoon Kosher salt
- 1 tablespoon granulated sugar
- 1½ tablespoons fresh lime juice
- 2 tablespoons chopped green onion for garnish
- In a medium saucepan, combine jasmine rice, water, butter, crushed pineapple (with juice), salt, and sugar. Stir to mix.
- Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low and cover. Cook for 15-20 minutes until rice is tender.
- Remove from heat and stir in fresh lime juice. Fluff rice with a fork.
- Serve hot, garnished with chopped green onions.
