Pineapple rice is a vibrant and flavorful Hawaiian side dish that brings the essence of the tropics to your table in just 20 minutes.

Ingredients

  • 1 cup jasmine rice
  • 1½ cups water
  • 1 tablespoon unsalted butter
  • 1 (8-ounce) can crushed pineapple in juice
  • ½ teaspoon Kosher salt
  • 1 tablespoon granulated sugar
  • 1½ tablespoons fresh lime juice
  • 2 tablespoons chopped green onion for garnish

Instructions

  1. In a medium saucepan, combine jasmine rice, water, butter, crushed pineapple (with juice), salt, and sugar. Stir to mix.
  2. Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low and cover. Cook for 15-20 minutes until rice is tender.
  3. Remove from heat and stir in fresh lime juice. Fluff rice with a fork.
  4. Serve hot, garnished with chopped green onions.
