  • ¾ cup Granulated Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 ¼ cups All-Purpose Flour
  • ½ tsp Baking Powder

  • ½ cup Brown Sugar
  • 2 tbsp Melted Butter
  • 1 small can Pineapple Rings (cut into smaller pieces)
  • halved Maraschino Cherries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until smooth. Add in the egg and vanilla extract; mix until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually blend into the wet mixture until just combined.
  4. In a separate bowl, melt butter and mix with brown sugar; spread evenly on the prepared baking sheet.
  5. Arrange pineapple pieces over the mixture and top each with half a maraschino cherry.
  6. Drop spoonfuls of cookie dough over the fruit layer.
  7. Bake for 12–15 minutes until golden around the edges; cool before serving.
