  • 4 medium sweet potatoes
  • 12 tablespoons olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 to 1.5 cups protein of choice (lean ground turkey, black beans, chickpeas, or shredded chicken)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup fresh spinach
  • 1/2 cup shredded cheese (cheddar, mozzarella, or vegan cheese alternative)
  • Fresh cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes.
  2. Halve each sweet potato lengthwise, drizzle with olive oil, sprinkle with salt, and place cut-side down on a baking sheet. Roast for 35-45 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers until softened. Add the chosen protein and cook through.
  4. Season with garlic, cumin, chili powder, salt, and pepper; stir in spinach until wilted.
  5. Once the sweet potatoes are roasted, scoop out some flesh to create a cavity. Mix this flesh into the filling.
  6. Fill each half with the mixture and top with cheese if desired. Bake again for 10 minutes until cheese is melted.
