  • 1 teaspoon coconut oil
  • 1/4 teaspoon vanilla extract
  • 1/4 cup natural creamy peanut butter
  • 2 tablespoons pure maple syrup
  • 1/3 cup vanilla protein powder
  • 1/4 teaspoon salt

Instructions

  1. Line a muffin tin with parchment paper liners.
  2. In a microwave-safe bowl, melt chocolate chips and coconut oil in short intervals until smooth.
  3. Stir in vanilla extract once melted.
  4. Pour melted chocolate into muffin liners, creating an even layer, and chill to set.
  5. Microwave peanut butter until runny, then mix in protein powder, salt, and maple syrup until combined.
  6. Form small discs of the peanut butter mixture and place them on top of the chilled chocolate bases.
  7. Drizzle remaining melted chocolate over peanut butter discs and return to fridge until set (about 1 hour).
