  • 6 extra-large egg whites
  • 2 cups icing sugar (sifted)
  • 2 tbsp cornstarch
  • 3 cups heavy cream
  • 1 cup icing sugar (sifted)
  • Fresh fruit (berries) for decoration

Instructions

  1. Preheat the oven to 90°C/195°F and line baking sheets with parchment paper.
  2. Beat egg whites in a stand mixer until foamy. Gradually add icing sugar, beating until bright white and voluminous.
  3. Mix in cornstarch and vanilla extract until combined.
  4. Pipe small mounds onto baking sheets and create dents in each mound.
  5. Bake for 60 minutes; then turn off the oven and leave to cool inside for about 2 hours.
  6. Assemble cooled meringues into a wreath shape on a serving platter.
  7. Whip cream with icing sugar and vanilla until medium-stiff peaks form; top each pavlova mound with cream and fresh fruit.
