1 cup walnuts (finely chopped)
1 cup almond flour
1/2 cup white sugar (for crust)
1/4 cup salted butter (melted)
6 oz pumpkin puree
2/3 cup white sugar (for cheesecake layer)
2 eggs
2 8 oz cream cheese (room temperature)
1 tsp pumpkin spice
1/2 tsp cinnamon
1/3 cup white sugar (for streusel topping)
1/3 cup brown sugar
1/4 cup oats
1/2 cup flour
6 T salted butter (softened)
1 tsp vanilla
Instructions
Preheat oven to 350°F and line an 8×8-inch baking dish with parchment paper.
Combine walnuts, almond flour, sugar, and melted butter for the crust; press into the prepared dish.
Mix cream cheese and sugar until smooth; add eggs one at a time.
Pour half of the cream cheese mixture over the crust; blend pumpkin puree and spices into the remaining mixture.
Spoon the pumpkin layer over the cream cheese layer carefully.
Prepare streusel by combining sugar, oats, flour, and butter; sprinkle on top.
Bake for 60-70 minutes or until set in the center; cool before chilling in the fridge.
