  • 1 cup almond flour
  • 1/2 cup white sugar (for crust)
  • 1/4 cup salted butter (melted)
  • 6 oz pumpkin puree
  • 2/3 cup white sugar (for cheesecake layer)
  • 2 eggs
  • 2 8 oz cream cheese (room temperature)
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar (for streusel topping)
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T salted butter (softened)
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350°F and line an 8×8-inch baking dish with parchment paper.
  2. Combine walnuts, almond flour, sugar, and melted butter for the crust; press into the prepared dish.
  3. Mix cream cheese and sugar until smooth; add eggs one at a time.
  4. Pour half of the cream cheese mixture over the crust; blend pumpkin puree and spices into the remaining mixture.
  5. Spoon the pumpkin layer over the cream cheese layer carefully.
  6. Prepare streusel by combining sugar, oats, flour, and butter; sprinkle on top.
  7. Bake for 60-70 minutes or until set in the center; cool before chilling in the fridge.
