  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 4 teaspoons pumpkin pie spice
  • 2 cups canned pumpkin
  • ⅔ cup brown sugar
  • ⅔ cup granulated sugar
  • 1 cup applesauce or canola oil
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1½ cups semi-sweet chocolate chips
  • ½ cup mini semi-sweet chocolate chips (reserve a couple tablespoons for the top of the bread if desired)

Instructions

  1. Preheat the oven to 350°F. Grease two 8×4 inch loaf pans and line them with parchment paper.
  2. In a large bowl, whisk together flour, salt, baking powder, baking soda, and pumpkin pie spice.
  3. In another bowl, mix together pumpkin, sugars, applesauce or oil, eggs, and vanilla until well combined.
  4. Stir the wet mixture into the dry ingredients just until moistened; fold in chocolate chips.
  5. Divide batter into prepared pans and bake for 50-55 minutes or until a toothpick comes out clean.
  6. Cool loaves in pans for 10 minutes before transferring them to wire racks to cool completely.
