  • 1 cup unsalted organic butter (room temperature)
  • 1 cup granulated sugar
  • 1/4 cup plus 2 tablespoons brown sugar
  • 1 large egg yolk (yolk only)
  • 1 tablespoon pure vanilla extract
  • 3/4 cup unsalted organic butter (room temperature, for filling)
  • 3 cups powdered sugar (sifted)
  • 3 to 4 tablespoons milk
  • 1/2 teaspoon pure vanilla extract (for filling)
  • 1/4 teaspoon maple flavor

Instructions

  1. Prepare pumpkin puree by blotting excess liquid with paper towels.
  2. Gather ingredients and whisk together dry ingredients: flour, pumpkin spice, oats, baking soda, cinnamon, and salt.
  3. Cream together butter with granulated and brown sugars until fluffy. Add egg yolk and vanilla.
  4. Mix in prepared pumpkin until well combined.
  5. Gradually add dry ingredients to wet mixture and mix until just combined.
  6. Chill dough for 20-30 minutes; preheat oven to 350°F.
  7. Scoop dough onto baking sheets, press lightly, and bake for 14-15 minutes until golden.
  8. Cool cookies then prepare the maple cream filling by mixing softened butter with powdered sugar, milk, vanilla, and maple flavoring.
  9. Fill cooled cookies and sandwich together.
